  6. 4 Tbsp. extra-virgin olive oil

  7. 1 red or orange bell pepper, diced

  8. 2 Tbsp. chopped cilantro

  9. 3 Tbsp. red wine vinegar

  10. pinch of salt and ground pepper (optional)

Shuck corn and slice off the kernals. Heat 2 Tablespoons of olive oil in a wok or large frying pan. Add kernals and saute for 2-4 minutes. Transfer the corn from the pan into a large bowl. Allow the corn to cool for 5 minutes. Add beans, tomatoes, red pepper, scallions, and cilantro. In a separate, smaller bowl, mix the vinegar, salt, pepper, and 2 Tbsp. of oil.
